Chicken Tikka with Spaghetti

So after making Beef Mince Spaghetti with Garlic Cream Sauce (you can read about that recipe here ), I got tired of having beef and decided to do something with chicken. I looked around in the kitchen for some Masalas and could only find Chicken Tikka masala, so I was like why not try something different?

I had some leftover garlic cream sauce that I made earlier. The amateur chef in me wanted to try something weirdly unique and this is how I came up with the recipe below. I am sure this has probably been made before as well (maybe! assuming there are other weirdos out there who like to try different combos when it comes to food. 😉 no I am not saying you should start topping your pizza with pineapple – maybe you should! that’s up to you!)

Anyway, this is also the easiest recipe I have tried and I was done with the prepping, cooking, and cleaning in an hour. 

So let’s dive right in!

These are the ingredients you need!

375 g dried spaghetti
2 cups mixed vegetables (i used carrot, capsicum, and scallion)
2 tbsp extra virgin olive oil (or any cooking oil)
500 g chicken breast (tip: cook more so that you can save protein for later. you are welcome! 🙂)
3 garlic cloves, crushed
1/4 cup garlic cream sauce (i already had leftover cream)

How to cook:

  1. Follow the directions on the package to cook spaghetti in a large pot of salted boiling water. Drain. Bring back to pan.
  2. Meanwhile, put 1 tbsp oil in a large frying pan and heat it on high. Mix in cut-up chicken breast pieces. Add salt and pepper to taste. Cook for 4 minutes. Add garlic. Stir constantly.
  3. Now while the chicken is cooking, take another pan, add 1 tbsp oil and add your vegetables. Stir and let them fry.
  4. Add the boiled pasta into the pan and mix the vegetables and the pasta together.
  5. Let it cook for 2-3 minutes.
  6. You can keep both the pasta and the chicken separate or you can mix them together (your choice – this isn’t a gourmet food so you can be as weird with it as you like)
  7. I put cooked spaghetti on a plate and then added the chicken on top before I demolished all the food I had made :p
